What is decaffeinated coffee? Methods, taste, and differences
Coffee decaffeination is a process that involves extracting caffeine from green coffee beans to obtain coffee containing less than 0.1% caffeine, in accordance with European regulations.
Decaffeinated coffee, or “deca,” thus allows you to enjoy the aromas of coffee without its stimulating effects. However, not all decaffeination methods are equal: some preserve flavors better than others.
There are currently four main decaffeination methods:
- Supercritical CO₂ decaffeination
- Water decaffeination (Swiss Water, Mountain Water)
- Ethyl acetate decaffeination
- Methylene chloride (DCM) decaffeination
Coffee Decaffeination: Which Methods to Choose?
The choice of decaffeination process has a direct impact on the aromatic profile of the coffee. Some techniques prioritize naturalness, while others focus on speed or cost.
CO₂ Decaffeination: Precision and Respect for Aromas
Supercritical CO₂ decaffeination is one of the most advanced and qualitative methods.
The green coffee beans are first humidified with steam to facilitate extraction. They are then placed in a pressurized environment, where supercritical carbon dioxide circulates, halfway between liquid and gas.
In this state, CO₂ acts as a natural solvent and selectively captures caffeine, while preserving aromatic compounds as much as possible.
The caffeine is then separated using an activated carbon filter, and the CO₂ is reused in a closed cycle.
Why is this method preferred?

Water Decaffeination: A Natural Method
Water decaffeination is based on a simple principle: using only water to extract caffeine.
The main challenge of this method is to avoid losing the aromatic compounds of coffee, which are also water-soluble.
To overcome this, processes such as the Swiss Water Process or the Mountain Water Process have been developed.
The principle:
- A first extraction is performed on "sacrificial" beans
- The water is enriched with aromas then filtered to remove caffeine
- This water is then used to decaffeinate the other beans without altering their aromatic profile
The result: a method capable of removing up to 99.9% of caffeine while preserving the coffee's taste qualities.
Note: Specialty coffees generally favor CO₂ or water methods, for their balance between naturalness and cup quality.
Solvent Decaffeination: A More Industrial Method
Solvent decaffeination has historically been the most widely used in the industry, especially for large volumes.
The beans are hot-treated with a solvent that dissolves the caffeine.
Two types of solvents are mainly used:
Methylene chloride (DCM)
An effective chemical solvent, it allows for rapid caffeine extraction. However, it is strictly regulated: authorized residues are extremely low (0.001% maximum).
Ethyl acetate
Often presented as a "natural" alternative, this compound can be obtained from the fermentation of sugar cane.
It is used in the same way as chemical solvents, then eliminated by evaporation during the process.
