Coutume was born from a simple conviction: Coffee deserves the same high standards as wine or gastronomy.
Since 2011, we have been exploring the full richness of specialty coffee to unlock its full potential. Each coffee is precisely selected, roasted, and processed, respecting its origin and identity.
As a committed roaster and recognized expert, we are dedicated to making this exceptional coffee accessible to the widest possible audience, without ever compromising our standards.

The Story of Coutume

Coutume was founded in 2010 by Tom Clark, with the desire to redefine coffee standards in France. Going against the trends of the time, he laid the foundations for a demanding project, inspired by major coffee cultures worldwide.

In 2011, the first roastery and coffee shop opened its doors in Paris. A space designed as a living laboratory, where roasting, tasting, and knowledge sharing converge. Coutume quickly established itself as one of the players who helped bring specialty coffee to France.

Over the years, Coutume developed a demanding and comprehensive approach to coffee.

The company is particularly distinguished by its recognized expertise, with four consecutive titles of French Brewers Cup Champion, illustrating a fine mastery of extraction methods and tasting. In parallel, Coutume structured its model around an end-to-end controlled chain: coffee selection, roasting, training, and coffee shop experience.

Coutume grew, both in France and internationally, while maintaining its identity: constant attention to the product and the experience. The opening at Galeries Lafayette Haussmann marked a new stage, at the heart of an iconic Parisian location.

In 2022, the roastery moved to Romainville, into a 750 m² space, designed to support the brand's development while strengthening its commitment to quality.

Today

Today, Coutume means:

  • 15 coffee shops
  • 65 tons of coffee roasted each year
  • +30 coffee origins sourced
  • 90 employees
  • 1 integrated roasting facility in Île-de-France, in Romainville
  • +350 professional clients, from independent coffee shops to Michelin-starred chefs

Coutume also offers a range designed to adapt to all uses:

  • 4 coffee ranges, with distinct aromatic profiles, to guide each tasting experience
  • 1 selection available in beans or ground, for all preparation methods
  • 1 complete coffee shop offering: specialty coffees, hot drinks, and light meals
  • 1 B2B activity dedicated to professionals, including coffee supply, support, advice, and machine sales

But above all, it's a vision:
that of coffee crafted with precision, respect, and high standards, from bean to cup. Every place, every cup, every detail is designed to offer a genuine specialty coffee experience.

We select our coffees from several major producing regions around the world, including Ethiopia, Guatemala, Mexico, Indonesia, Uganda, Costa Rica, and Colombia.

Each coffee is chosen for its aromatic profile, traceability, and the high standards of the producers with whom we work.

Roasting is at the heart of our expertise.

In Romainville, we reveal the identity of each coffee through precise and unique roasting profiles, designed to express its full aromatic potential.
